Executive Head Chef Ricki Weston

Awarded One Michelin Star in February 2022 and retained consecutively every year, Ricki Weston champions hyper-seasonal British cuisine inspired by nostalgia, terroir, and zero-waste stewardship.

Born in Storrington, West Sussex, Ricki developed his craft at celebrated kitchens including Whites Kitchen, contemporary Japanese restaurant Wabi, The Camellia under Steven Edwards, Michelin-starred Matt Gillan at The Pass, and Two-Michelin-Starred Restaurant Sat Bains in Nottingham.

Joining Whatley Manor in August 2018 as Sous Chef, Ricki was named a Roux Scholarship regional finalist in 2019 before taking leadership of the hotel's culinary programme in 2022. Working hand-in-hand with Head Gardener Michael Adams, Ricki orchestrates daily kitchen-garden harvests, seasonal fermentations, and our on-site apiary honey.

A relaxed, convivial dining space opening directly out to the stable courtyard lawn. Serving British classics, seasonal small plates, and traditional roasts.

  • Dinner: Monday to Sunday from 6:00 PM (Seasonal small plates menu).
  • Traditional Sunday Lunch: 12:30 PM – 2:30 PM (2 courses: £39.50 | 3 courses: £47.50).
  • Jazz Sundays: Select Sundays with live jazz guitar duo Gilmore & Jaz: £52.50pp.
  • All-Day Dining: Served from 12:00 Noon in the Drawing Room and Bar.

  • Full Afternoon Tea: £42.50 per person.
